Once mistakenly believed to be unhealthy because of its high saturated fat content, it is now known that the fat in coconut oil is unique and different from most all other fats and possesses many health giving properties.  Conventional coconut oil comes from dried coconut flesh, called copra.  Copra oil extraction requires large-scale, high-pressure, expensive, energy-intensive equipment.

Unhygienic drying, humid tropical conditions, bulk shipping and long distances result in lengthy delays and the growth of moulds on the copra.  Thus copra oil requires refining, bleaching and deodorizing to create a commercially acceptable product.  The all wet process uses raw coconut rather than dried copra.  Modern raw techniques use centrifuges and cooling to break up the emulsion of oil and water which is created by the protein in coconut.

The wet method can be applied on family operated, small scale farms using equipment that a bush mechanic can repair.  Raw organic coconut oil is known for its quality, healthy saturated fats.  Raw organic coconut oil is mild in flavour and non-hydrogenated.

Coconut oil has many uses including hair oil and body moisturizer in addition to a variety of applications in the kitchen.  Use coconut oil in smoothies, as a spread on toast, or as a cooking oil when frying or baking.
